Shiitake: Are these looking correct?

Good day.
First time with Shiitake Mushrooms. I'm using the "In-Jar" technique shown on the RR DVD. Few Questions: Colonizing
 Colonizing
 Colonizing
 Side View
 Tops Showing Brown
 Popcorn Texture

My question is:
- Are these looking like they are supposed to?
- How long till pins arrive?
The room smells delicious!

They're popcorning, they are ready to fruit!
Put in fridge the jars for a week, then soak them in water overnight, then put them to fruit

I've removed them from their jars and soaked them overnight. I then placed them into the FC.
As of right this moment I haven't put them in the fridge. Hopefully that step was not completely necessary.
For some information on my temps in the FC, I'm right around 60f at night and 70f in the day.
Will these temps be alright?

From what I know it IS necessary to cold-shock shiitake.

Shiitakes are very hard to fruit unless you have a good specimen or strain. They can take years in the wild to fruit. The cold shocking in my opinion, is very necessary. I would throw them in the fridge for a little while. It will induce the mycelium into fruiting mode.

Nice healthy looking jars! Those are going to be yummy.
I've never seen primordia before my jars entirely bark over and it looks like you're on your way to it! I'm using the WR strain, do you know what strain those are? Maybe it's because of RR's tek? What substrate are you using in those pretty jars, are they just BRF/verm?
Beautiful grow, I can't wait to see it fruit

No,it isn't necessary. Once Owl gave me for present a Shiitake block, after a week I controlled the block and it was fruiting into the bag..so no cold shock is necessary..but if you want to see them to fruit (in a short time) cold shock them. The Shiitake is really a natural clock, 1 or 2 days after the cold shock it will start to fruit.
In my experience is better to cold shock them and then soak them overnight. In this way they stay in the bags/jars, in their "uncontamined" environment. This not happens if you soak them, and then you put in fridge (fridge is a pit of contaminants).
RogerRabbit suggests to wash them on the faucet a day yes and a day no, to remove any unvisible mold that is growing on them. Use gloves!
However do not worry for those temps, they are okay, but do not keep them too high, in this other case contaminants can bloom.

Refrigerators are often set too cold, and will harm the mycelium. If you use one, set it to it's highest setting, around 55F/15C. If it's the right temperature out doors or in your garage, that's another option. They need a nice cold shock of a week or so to really fruit well. After that, put them in fruiting conditions with lots of fresh air. RR

Are you sure Roger? My experience isn't long with Shiitake like your but a fridge setted to 5°C for me worked perfectly.
Perhaps had i a cold strain?

5C is a tad on the cold side, but many US refrigerators are set to 1C to 2C, which is too cold. RR
