I read something about using coco coir and coffee as a spawn substrate but can't seem to find it now. What are the mixing percentages and how much hydrated lime to adjust the PH?

You can check the link in my sig below or search the archives for a plethora of varying recipes. And just to be clear, we're talking about UCGs (used coffee grounds) not the liquid coffee directly...

I didn't use coffee in mine and had success, I am wondering now, what additives I can use next time, for more success, ie, more nutes available for much larger fruits.
I am assuming coffee should have been one additive.

I used straight coir and had fantastic results. I might try adding coffee to it next time to see what that does.

In my humble experience, adding used coffee grounds (UCGs) to coco-coir adds more bio-diversity to the substrate and gives you another flush or two than you would have otherwise seen in straight coir. It's not going to make the fruits larger or more dense - as that's principally a factor of genetics and environmental conditions such as available moisture content for the fruits to draw upon - however every little bit helps...
