Sounds like you disturbed the mycelium by scooping away the verm. And 85 is a bit low, but not horrible.
3-5 fresh air exchanges a day. High humidity. do that.

when you stress the mycelium it tends to "shock" and will take a couple days to "recover". Fruiting also tends to stress the mycelium out which is why after a flush you should let it rest for 3-5 days without doing anything and then dunk and attempt to fruit again.
The temps and humidity you have it at are fine, I run in those ranges almost exclusively however it will make everything a little slower. As with anything you cultivate/grow, patience is the main ingredient.

you only got one pin in the first flush, so the one pin grew into a giant mushy. Kind of like growing a giant pumpkin pick all but one and the one gets big very big.

i had one do that to me on my casing i just did of PESA, it pinned int he very corner of the baking pan and hit the most light first so then it grew first, also i wasn't watchin it for a day and it popped purple spores everywhere under it! I was pissed that was my biggest shroom yet 7.6 grams and i could have gotten a hell of a print of her. shit.

morning guys yeah that one shrooms veil broke it weighed 37.9 GRAMS!!!!
what do i do keep it in the fruiting chamber or do i dunk and re do it? and should i just leave my other one she is being stuborn

Let the tray rest for a couple days before dunking an inducing the second flush. If you dunk immediately, the colony is still going to go through the same rest period, but it's going to be soaking wet and more readily contaminated.
At least in my humble opinion...
