Need HDD upgrade advice

Alright, I have 2 SATA drives, an 80GB and a 120GB. The 80 has only 1GB free space left and the 120 has about 10. I'm going to run out of space soon, so I need to get another HDD.
I was thinking about buying a 750GB drive, but the thought of having that much data on 1 drive really freaks me out because I saw 3 drives fail within a month at work this summer. One of them was a brand new 500GB drive with about 50GB of very important experimental data on it. I just barely saved it.
If you were me, what would you do? Buy several drives? Buy one big drive and use the others back up and put them in a box for safe keeping? Set up a RAID array? This is a hard decision because there are so many damn options.

Well, how much space do you really need and how much are you willing to spend? If I were working with really important stuff I'd definitely set up a RAID 1 array using two smaller drives as opposed to getting one big drive with the risk of failure.

I think the sweet spot for hard disks now is 500GB. That is, the lowest cost per GB is with a 500 disk. Thats not the only metric, but its always the one I use when purchasing.

To be honest, most of my data at this point is shit: music, movies, software, etc. But some is very important school and photographic data. If I lose that and the music I'd be pissed, the rest of the stuff, eh, not so much. Once I get to grad school though, I'm sure I'll have data that my career could depend on.
If I can afford it I think I might set up a RAID array of 2 500GB drives. Is it possible to run RAID and also just have 2 slave drives(current ones) that aren't part of the RAID array?

I believe so but I've never done it myself.

Alright, I found a cheap 500GB drive here: http://www.memorylabs.net/sest5072rpm1.html
Question is: would you ever buy a "recertifed" HDD? I kinda think this would be a horrible idea.
What's everyone opinion on refurbed electronics in general? Bad idea? Depend on the company?
