I boil the water first then put the jars in...I did an LC of honey right....im using a rounded hot plate that only gets the center of the pressure cooker...IT still heats up fine but it takes about 40 min for it to reach 15 PSI....which by then my LC is carmalized... I need help on what to do

are you pc'ing pure honey??? it should be like 2tbs honey for a 1/2cup of water or something like that. mix the honey and the water (use warm water) and it should not caramelize

Very bad idea. That's a good way to break the jars. It shouldn't take that long to heat up, so get a larger hot plate.
Regardless of how long it takes, it shouldn't be carmalzing the sugars. That takes a higher temp than 250F. Did you fail to elevate the jar above the bottom of the PC? RR

Hopefully, you know to leave the weight off the nozzle or to leave the toggle valve open until several psi have been reached before closing the toggle or placing the weight on. If you fail to let steam vent for a few minutes, it takes much longer to reach pressure, and the pressure that is reached is not pure steam, but a combination of steam and air pressure from expansion, which is useless for sterilization. WOW! DUDe your right!...thats what i've been failing to do...right when i put the top on i put the sterilization nobe down so it starts automatically keeping pressure in....is this why its been taking soo long?

Wait for pure steam to come out. It will burn your hand if you get it within a few inches. At that point, close the valve. Start time when 15psi is reached. RR
