Okay... so I have been soaking my grains for about 20 hours now.. I read in a thread started by RR to boil the grains in the water that they now sit... This makes me a little uneasy... The water is now yellow and foamy and I am worried about doing it that way... I'm planning on letting it soak for another 12-24 hours (no more than 48). Would it be a good idea to strain, rinse well and then boil in clean water... I am not using any coffee or gypsum or lime in the soak water and not planning on using them. If I do boil in clean water... what temp should I get the water to before adding the grains.. Thanks for putting up with me.. You will not hear me ask about rye ever again lol. The Werd

you don't have to boil anything.
just rinse well after soaking, allow to dry the proper amount, then load into jars.

Last time i over soaked my grains(about 2 1/2 days) they were rancid when i strained them and even after cooking and the PC they were completely worthless except for G2G transfers i honestly would suggest going ahead and cooking them.
I also think straining them THEN cooking them is better IMO, now I'm not saying RR is wrong by any means. it's just something i do. I soak drain and rinse, THEN boil, then strain and rinse AGAIN, then PC them after they have sat to drip dry for about 20-30 minutes.

If you soak too long, your grain will start to ferment. I just rinsed my rye very well after a 24 hour soak, put it in fresh water in a big pot, simmered until 5 - 10% of the grains looked busted and then let drain for 2 hours, then loaded.

Thanks guys... I guess now THAT becomes the question... "To cook, or not to cook?" There's allot of different opinions, I have only cooked with mixed results... mostly good, but I'm used to 100% with the BRF sooo I would like to get back into those stats I'll be spawning on poo... what difference does that make if any in the To simmer or not to simmer question... Thanks again, after this... I think I'll be fine on my own with Rye so it leaves me enough time to ask other stoopid questions lol

personally, i soak for 24hrs, sometimes a little longer, rinse, drain, pack up the jars, then PC.
I've never boiled, and honestly haven't found a need for it.

I agree...24hr soak, drain, rinse, drain, then PC has always worked for me

The reason for the boil is two fold. One, it kills the germinated bacteria that is making the water stink. If you just pour it out, you release billions of bacteria in your house, which also makes the sink drain stink since some of it sticks around in the sink P-trap.
Two, the boiling, then pouring off the hot liquid helps the grains to steam dry to just the right moisture content. Draining usually doesn't get the grains dry enough, thus people often end up with either grains that are too wet, or burst kernels after jars are removed from the PC.
You should have used gypsum. RR
