ok I made 3 cakes on friday. everything is was sterilized and done properly. the cakes are in containers with holes in the top that are covered with tyvek. the seal is good, but i forgot the dry verm.. Im not sure how i forgot it, but my question is this... do i risk opening them to put some sterilized dry ver on top or do i just let em go?

they might be fine, i heard of people inoculating pf teks with spore prints, meaning no verm barrier.
I wouldnt risk opening.
With the tyvek im guessing that they should be fine.

The first time i did a cake i did not sterilize it long enough and it fermented.. is a common occurrence?

You do not need a dry verm layer, it helps but its not necessary. Tyvek will get over saturated with moisture and be a haven for mold spores as well as releasing to much moisture from your cakes depending on how many holes you put in your lid, You want a lid that is tight but still allows a minimum FAE when it comes to cakes, tinfoil lids work just fine in conjunction with a dry verm layer but I used just tinfoil lids for months without a dry verm layer, I lost maybe two out of 20 cakes to trich....
And fermented cakes = bacterial bloom, you need to re-evaluate your sterilization procedure if your having problems with that.

the fermentation happened on my first try but that was because i did not PC long enuff.. the second time i PCd for 45 min.
im gonna just leave them alone at this point maybe cover them with aluminum foil as well.

I also think my tyvek lids allow WAY too much air exchange. I cut the center out of one of these... the whole center

You want to PC for longer than that, even, considerably. Those lids are shitty; I experienced nearly 100% contamination over the course of 3 weeks with those, vs. a 5% grain jar rate. I don't know how (or why) you put tyvek in there but that can't possibly help.

thats OK cuz its a learning process.. this is why im only doing a little at a time..
I think ill actualy be OK.. with this run.
The next batch ill PC for an hour or so and innoc with the LC..

The LC is superflous, particularly if you're still learning. Get ready to see every last jar turn green if you mess it up, and only to gain a handful of days.
I'd invest in some mason jars.

its not the hard way.. actually its probably the easiest way.. since no matter what i learn here, real world practice is worth a million times more experience. but that does not stop my inquisitive nature. You don't have to answer my questions.. I find it amusing when people get pissed because they feel the need to answer someones questions.. its a choice dude.. just dont answer if ya dont wanna..

its all learning thats why were here cos we love it the more experienced amoung us seem to forget they had first grows i suggest taking your time thinking through the process before hand and double check wot your doing as your doing it and enjoy it

im listening.. there is just nothing i can do about this mistake except be optomistic. I will obviously know better next time..
I do disagree about my jars, i think i prepared the lids wrong, but the jars are fine..
As far as PC'ing goes, ill be sure to PC for longer next time
dont think im not listening.. but there is realy nothing i can do about these 3 jars.
