How long or how much % of casing should have pins before you switch it from 95-100rh to 85-92rh?
thank you

Never. Leave the humidity high the whole cycle with lots of air exchange. RR

How come people say to cold shock tropical species? How come people say to pour bleach all over your perlite? How come people say if you can see to read, you have enough light for mushrooms? How come they say you can have a totally sealed terrarium and fruit mushrooms? etc, etc.
I can't control what others say. Just telling you what works. Mushrooms want high humidity and lots of fresh air. RR

Personally, provided I'm keeping the casing layer properly hydrated to that near-saturation level through misting / whatever, I'm happy with anything over 85% RH in my greenhouse for a cased bulk substrate tray.
I'm fairly certain you wouldn't need as high if you were fruiting a substrate un-cased... (PF tek cakes, for example) although, as always, your mileage may vary.
