Have you dropped the temperature in the FC? FAE is very crucial as well...

You shouldn't try to judge humidity by the condensation on the walls. If you don't have any apparent contamination, then yes you can pick up where you left off. Remember, FEA is number one on pinning triggers

Temperature drop has nothing to do with fruiting. Cubensis will fruit well into the 90's. Moisture, humidity, light and lots of fresh air are the keys to pinning. Condensation in no way indicates humidity. You'll need to get a hygrometer and calibrate it to know your RH. RR

Refering to Paul Stamets informative guide " The Mushroom Cultivator", most psilicybe species set pinning between the temperatures of 72-79 degrees, with 75 being optimal for a even pin-set. Past research has shown that at 72 degrees the growth of fruiting bodies slows, however the resulting harvest has I higher psilocybin content than those fruited at higher temperatures. However your harvest won't be nearly as large as those grown at 75-79 degrees. Larger yeilds(however less potent) will result from growing between 75-79 degrees. Personal research has proven this to show that past research is correct. For the best results, I found that initiating fruiting at 79 degrees, and then slowly dropping teperatures by 1 degree per two days results in a healthy pin-set and high psilocybin content. I highly suggest you purchase the " Mushroom Cultivator", by Paul Stamets. Good luck with your work.
