Is there any way to keep a colonized/colonizing substrate (coir + gypsum) from eating through the disposable baking trays? Perhaps putting a plastic shopping bag in there and then trimming ti?

It's not the substrate. It's the mycelium and its metabolites. Use plastic trays, never aluminum. RR

Same thing happened to me using coir and coffee in turkey tins. Get some plastic trays, well worth the investment, plus you can get reusable lids to.

Turkey roaster pans are fine aslong as you line them with a garbage bag or some sort of plastic.

True that.
If you use some thin (the kinda crinkly variety, almost transparent) black plastic garbage bag, it will cling to the substrate as it dries and help reduce side-pinning.
But then some people like side pinning b/c you tend to get some monsters that way. Personally I like to be able to easily see & pluck all the fruits...hidden, rotting side pins are a great "in" for contams.

I had the same problem. Just line the bottom of the pan with aluminum foil before you sterilize and it works fine. Put foil down in new baking trays at the start and they will last much longer.

Not. Just put some plastic in between the fungus and the aluminium. Or use plastic trays.
More aluminium just means it will take longer to eat a hole through the bottom. It's a damned waste of an important metal.
