one of these was found in estonia, they say it's rare. is it edible?

Nice, edible, yes it is and it is very good. It would be better to say that they are uncommon. They grow in the same places every year, I have found them fruiting beside the same stump three times in one year.

Cool cauliflower mushroom!

They are a good edible. Make sure to cook it well though, or it will be tough.

Rarity would depend on where you are. We don't have them here where I live at all. Other places seem to find them all the time.

They are considered a pretty good edible.
