ok so what to do now...?

It was my first grow, and it was kind of successful. I got a kit and the mycelium grew on the rye in a bag for about 5 weeks before it was done. At that point I removed the compost from its bag and put it in a plastic tub mixed with the colonized rye.
About two weeks later the compost was fully colonized and hyphal knotting began. When the knots looked good I applied a 70/30 or 60/40 verm/coir casing mix that i pasteurized in the microwave for five minutes, stirred, nuked for ten more and let sit for an hour and a half.
I applied the casing and a week later I see mad pinning on the sides and a few days after that I'm harvesting, with still no pins in the center.
So now my first flush is completely done and I'm wondering what to do. I got a lot of weigh from the sides of the tub, but I feel like if I can re-case it I can get a more even pinset.
There are the old stems still deep down because I cut them at the top of the casing layer. Do I remove these, and if yes, how?
How can I get the casing layer off without messing up the colonized compost?
Please help!

Twist and pull, never cut. You can patch the places you harvested from. Was your container transparent or semi-transparent? My advice would be to just do another grow.

if the casing is small enough to hold in one hand just lay a piece of foil over the top and upend it,lift the tray off and pick the stumps and any aborts then replace.if you have another container of similar size you could use that. if the tray is too large for that, anything stiff of appropriate size that will cover the casing could be used instead. i wouldn't try to get the old casing off.
