We have stomach acid which would destroy spores almost immediately on contact. The only reason they surrvive the trip through a cows digestive tract, is because cows don't have any stomach acid. In fact they don't digest their own food. Millions of bacteria in the cows stomach digest the food for it. This is very in-efficent. So most of its feed comes out the other end looking much like it did when it went in.
