Mushrooms crispy dry in baggie and then become soft after 3-4 days?

I dried my mushrooms with that dry-z air stuff. They got so dry that when I put them in a plastic baggie I could crush them into powder. I left them in there for about 3-4 days and now they are soft again? Why is this? Is the baggie not completely air lock or something? Any Ideas?

It is possible that either a fruit was not 100% dry and introduced moisture into the bag or your bag may have a hole. I highly recommend using freezer bags vs. sandwich bags, if that's what you're using.
