OK i was sitting here thinking and came up with some thoughts for substrate
Pumpernickel or Whole wheat bread (dried and crumbled) Puffed Rice cereal (sweetened/unsweetened?)
And what about something like whey protein powder or something of that nature (as in something from a health and supliments store)

getting fungus to colonize a substrate is not the hard part. anyone here whos played around enough can tell you that.
the hard part is getting it to fruit.
and as such, the options you've suggested would have problems with that for various reasons.

What really works well for your substrate is if you measure out all the water you need, put it in a pot with a bunch of rice and boil it for about half an hour or until the water looks kinda milky, strain out the rice and keep the water and then meaure again cause youll have lost some during the boiling, I believe this gets more nutrients into your substrate.

Colonization is not the main problem, nor is fruiting. You need a sub that you can sterilize. You also need to be able to get just the right amount of water. Bread can't hold a lot of water without just getting soggy, and you would not be able to sterilize or even pasteurize it. Nice ideas, but not the most feasible.
Rye and WBS are commonly used because they can easily be hydrated to an ideal level, and they can easily be PC'd to kill of all the nasties. Their less than perfect nutritional characteristics are commonly augmented by spawning to bulk amounts of poo or straw, greatly increasing the yield/effort ratio, as well as cost efficiency. Myc will eat lots of stuff, but balancing nutrition (see yield) versus ease of use is important. Rice krispies or oatmeal should theoretically work too, but you'd get a sloppy mess with relatively little nutrition.
