How do these look in terms of moisture? And what to do about grains sticking to the sides...

Some grains are stuck to the side of the jar. Aside from hitting them down, is it a problem if a few grains are stuck near the top?
Also, does this look too moist? Does the fact that grains are sticking to the sides mean it's too moist?

The jars do look a little wet. Moisture content just takes hands on experiance, the best advice I could give you is too soak your WBS and not simmer it, avoid WBS mixes with cracked corn, rinse and Drain well before loading into jars, don't overload your jars and make sure you shake them after PCing while they are still hot... but make sure you allow the PCs pressure to equilize before opening it and be careful of steam.
I wouldn't give up on those jars tho, might just be slow to colonize.

They were shaken after PC'd while still hot after pressure equalized.. And yeah some grains do look cracked...moreso than after they were PC'd..weird
They were drained after being simmered for 30 mins, then rinsed, then drained...before goin into the PC'er..went by the Doc's Bird Tek..
Is it a bad thing if some grains stick near the top of the jar?
There's coffee filters on top of the lids...micropore tape over a breather hole, and then tyvek under the lid..

I don't know...too many is a bad thing..forget why....the acceptable # was about 5 per spoonful according to the bird tek by doc

Seeds sticking to the top of the jars hasn't caused a problem for me before.
You should try just a 24 hour soak. As long as you schedule allows you to plan 24 hours ahead of time then it actually uses less of YOUR time to just fill up a bucket with water and throw in the seeds rather then stand around a pot stirring it and checking it's moisture..

Yeah, actually did a 12 hour soak...rinsed...THEN simmered for 30 mins..rinsed....drained...PC'd

Next time, just make sure the exterior of the seeds are dry before you load the jars and you'll be fine. Some growers spread them out on a towel, while I drain them hot after boiling and shake the collander around so they steam dry on the surface. Those will probably work, but may be a tad slow to colonize. It takes a few batches to learn to get the moisture content just right. RR

tilt the jar and if you can see moisture pooling at the bottom, then it is probably too wet.

Wow, thanks RR I didn't know that. They were just in the colander, and weren't spread, and only were left in until a lot of the water was out (the colander was shook, bounced up and down, tilted..). Spreading out will definitely help...
Glad to say there is no pooling of water..whew..just water like in the picture where each grain touches the glass. It already looks drier towards the top on most jars, and the bottom is a little wetter but not pooling at all...crossing fingers, making another batch anyways
Question, if anyone wants to answer - does flaming the needle on a syringe kill all endospores if done right?
