What is the purpose of the polyfil in the syringe?

When you input fresh air via the syringe, do you fill up the vacuum? If not - wont the outside pressure be able to push air through the punctured silicone?

What is the purpose of using two kinds of syrups?

Sorry for all the questions  Nice writeup

I use both for good reason, a) pans dont like karo alone b) both cause quick colonization c) it's how i do things YO.

I dont let off all the vacuum no, i leave it slightly under pressure, keeps contams out.

the silicone is self healing, and no, it doesnt leak. The polyfil acts as a filtration medium

How does under pressured jars keep contams out? I would figure it would make it easier for stuff to get in. Over pressured on the other hand...

Sorry for sounding as if I don't trust your teks, that's not the case. I'm just a curious being. Knowledge is power!

its not "under pressured" its underpressure. that means there is pressure being exerted on the medium.

Take it easy *hides behind the sofa*. As I said I trust it to work very well. I was just curious about the technicalities behind it.

You close the lids tightly before pressure cooking? Wouldn't that be a hazard?

only to the inside of the PC ..
when I make a LC with rubber plugs as inj sites .. they form a vacuum
a needle with polyfil will vent it to normal air . curious on the "pressure" part myself..

if this is the case, I'm wondering if it wouldn't be easier to PC the jars with loose lids and tighten them as soon as you open the PC, meaning you don't have a vacuum so no need to inject sterile air. Would there be a big risk of contams getting in in the time between opening the PC and tightening the lids? If not, are there advantages to having a vacuum and controlling the amount of air added?

Have people found vacuum LCs with no added air don't work at all? I'm still finding out by trial and error. Mine are only small (200ml liquid, 100ml vacuum space).

I'm not totally sure how a vacuum works. Presumably there is *some* oxygen in a vacuum at the top of a jar or else the sides would cave in? Just less than normal. And there is oxygen in the water.

Sorry to go a bit off topic. Nice write-up, Jeetered

Nice write up jeetered.
Do you add all 60cc's of air all at once? After inoculating it or do you add a little at a time?
