Butyric Acid -- Sour Milk Smell...

...not from my jars mind you, but rather from my substrate. It smelled healthy when I harvested the compost, smelled fine as it was thoroughly and completely sun-dried over thetwo days following harvest...and it even smelled fine after it was rehydrated to field capacity last night before pasteurization.

Note: Whenever I talk about smell, I'm talking about what my wife reports as a smell. My sense of smell is shot and I couldn't smell a garbage truck driving in front of me on the freeway - literally.

So this morning I wake up and start spawning my rye to the pasteurized substrate (compost) and I'm on the last tray when my wife comes in to check on me and immediately proclaims... "eww, what's the sour milk smell?"

Well damn. Regardless if I have an active bacterial (bacillus subtilis most likely) contamination, the smell means that I have a substrate full of butyric acid...

Can't really find any definitive answers on how harmful it is in substrates for mycology or agriculture in general. There's a lot of junk-science mentions of it, but nothing concrete.

Any feedback would be helpful, either way it's a bummer...
