Soaking WBS

Do you guys ever change the water midway through soaking WBS or do you let it sit in the same water all the way through?

I change the water a couple of times. Especially before I simmer. At the end of the final rinse, I want the water to come out mostly clear. I dunno if it makes a difference, but the extra work doesn't really bother me.

Well, I will rinse it before I simmer. Just wondering if during the 24 - 36 hours if people change the water.

24-36 hours is way too long. it will start to ferment. < 24 hours is fine... especially if you are going to simmer.

I too leave it in the same water. changing it out is simply unnecessary. you should rinse the grain VERY well before AND after the soak to remove dust and other baddies.
I do not think 24-36 hours is too long either... I use both all the time. Read Me. There's some good advice in this thread.
There's no magic time for soaking. I don't think 24-36 is too long, but also don't think 12 is too short. What matters most is the amount of water absorbed by the grain. aside from corn, most grains we use don't have super high bacterial endospore counts anyway, and don't require super long soaks to germinate them.

Okay, sorry to put another question in this thread, but what does everyone do for simmering time for WBS? I think I've been doing it too long. I do it until the grains are burst open. My jars have seemed pretty wet lately and the spores don't like it. But then I've also had problems with jars being too dry. I'm just trying to find the perfect moisture level here. I simmer for 25-30 minutes or until they look done.

they cant really be too wet if the seeds arent bursting in large numbers. my bet would be they arent getting rinsed off well enough after simmering.
i know when they are done simmering because a few of the kernels start to burst.

Huh...so that's my problem, perhaps? Inadequate rinsing? Interesting. Come to think of it I have never given them more then a 30 second rinse. I guess I didn't realize it was such an important step. Makes me want to rinse overtime the next time I prepare jars.
