ok to soak rye less than 24 hours?

I started soaking them at 10pm last night so its been 18 hours
I just cant simmer them later tonight because I have plans
would it be ok to start simmering now?
I'll just wait if it increases my chance of contamination

24 hours minimum is the standard practice, but really, 20 is good.

You can soak for up to 72 hours by some reports.

Soaking gives bacterial endospores time to germinate, ans thus become vulnerable to PCing.

To cut that short is to risk endospore survival.

You can boil now. Anything over about 4 hours should be long enough to soften the grains enough to prevent the kernels from bursting. Endospores are rarely a problem with rye, provided you soak at least the 4 hours mentioned above. If the batch of grains you're using has an unusually large endospore count, you might need to soak longer.

Actually, and maybe Roger will back this up, 2 hours in the PC is more crucial than 24 hours soak.

My foaf had numerous contam issues when soaking for 24 hours, but PCing only 60 minutes.

When he switched to 24 soak, and 2 hours in the PC, contams all but disappeared.

grains do NOT need to be pressue cooked at 15psi for 2 hours.
90 minutes is sufficient.

Yeah, 90 minutes works also, 2 hours ruins everything, what a baby.

"My rye tek:
...Cover with foil and PC the jars for at least 90 minutes at 15lbs. I use 120 minutes. When the jars are cool, they're ready to inoculate."
