does anyone know what i mean? i have researched but found nothing, popular in japan and other countries (not US). i havent had them in a long time and cant find them. the problem is shimeji can be used for two different mushrooms. the one i am interested in is the one in the pic, looks like a baby oyster. i would really like to find spores/culture to cultivate them, any info is apreciated

ive found that at wikipedia but i believe that those are the "other" kind. i am thinking maybe just grey oysters, but how to get them to grow like that?

The pictures look exactly like "baby" grey oysters. They also do look like they are growing from bottles (Japanese style PPE bottles). I believe that if harvested that young, the stems have a nice texture as well.
You can probably grow those easily using any of the many methods/substrates for growing oysters, and just modifying the teks to grow out of mason jars.

Yeah you're right...those hypsizygus look nothing like his pictures. He's interested in immature grey oysters for sure, IMO...

The mushrooms in the above posts appear to be P. columbinus, not Hypsizygus tessullatus.

It depends on the several things. The easiest way IMO to grow them is on newspaper.

In Oz they sell Hypsizygus ulmaris as Shimeji, look just like your pics. I have fruited them on popcorn, and the mycelium grows well on coffee grounds, cardboard, paper, wheat and millet-that's what I've tried so far.
