coolmist's do just that they blow out a cool mist, ultrasonics blow out a fog its really thick, the benefit of having both is so that if your coolmist isint raising the humidity ennuf then you can set the ultrasonic to come on once an hour for 5 mins or so and it make it more humid, i dont have a problem keeping my humidity up so i only use a coolmist,
peace out Dm

A cool mist actually moves air. A ultrasonic doesn't. A cool mist helps the air move around your fruiting chamber. And if it is pumped from outside your FC, then it helps supply fresh air exchange as well. However, an ultrasonic provides a lot more humidity. I would recommend starting with a cool mist, and if your set-up requires more RH, supplement that with an ultrasonic.
The ideal set-up depends on what kind of fruiting chamber you have. For a greenhouse or martha-style set-up, a cool mist running 24/7 and an ultrasonic on a timer works well if you are pumping both from outside. Of course, there are those who prefer to just put a cool mist inside the fruiting chamber on a timer. I've kind of gotten off topic here, but the point is that there is a number of ways you can use each.
