That could just as well be them bruising from being cut down the center. the parts that didn't come in contact with the knife look pretty good, see where it's hollow in the center and there's that divide? Nice and white. I think you just bruised them

They are edible but I think they are close to that point where the abort begins to rot. Up to you. I don't think any harm will come to you from eating them but I'd hurry up and dry them if I were you.

My guess would be lack of water to the fruit as the culprit for the bluing...and yes also a little bruising.....but I always cut my large fruits down the center during the drying process to speed it up, and I never noticed any severe bruising from the blade.
Still, your's look 100% fine to me, nothing abnormal.

Thanks for all the fast input guys. Paranoia level has reduced dramatically
Here's another question for ya, I posted this in contam forum but no one seems to be checking that.
I found this tan stuff on a cake, that didn't look like vermiculite. I scraped at it with a tweezer and it broke away almost like soil would. It dug its way into the cake, but healthy shrooms are still growing on it. Should I throw out the cake?
This tan/brown stuff has been eating its way into one of my cakes, yet there are still healthy shrooms growing off of it. What should I do?

I agree that they are that color because they are reacting to being cut not due to rot.
I would have left them on the cake until you picked the larger ones.

Sweet, I was just taking precautions because lots of people were saying that once the caps turn black they'll infect the cake.

I don't like the look of that contamination. I'd either discard them or put any cakes with that stuff in another FC so it dosen't spread.

The blueing is most likley from the active psylicybin in the mushroom oxidizing. They would be fine to eat except that nasty tan shit on your cake is a contamination. Throw that shit out as far away from your grow as possible right now man. You will ruin the rest of your cakes.

as long as there isn't any contam on the fruits themselves, i would reckon they are fine. I would get a few more opinions though.

the spores from the contam will definitly be on the shrooms. You wont be able to see them and depending on what it is, it could give you serious food poisoning. Do not eat. Throw it out!

Thanks, I'll wait for a few more opinions. There are some healthy new pins growing on the bottom that I really dont want to see go to waste :\
I took out the cake and scraped out the contamination as best I could, which dug pretty deep into the cake. I also scraped off the greyish stuff on the sides of the cake, it looks nice and pretty now, but I'm wondering if I shouldn't let myself be fooled and toss it anyway.
