I offer here an alternative for complex jar lid designs. This one is simple and elegant.
Step 0: Necessary items.

I have here a tube of silicone caulk, a square of aluminum foil, a square of tyvek, a mason jar ring, and a mason jar.
Step 1: The filter


The tyvek is placed over the mouth of the jar and secured with the ring.
Step 2: The injection port

The caulk is applied to the center of the filter and allowed to cure.
Step 3: Air exchange regulation

The filter is loosely covered with the aluminum foil.
Step 4: Completion.

The complete lid. The foil can be loosened or tightened to optimize air exchange or solve moisture problems.

I use this lid for all my jars. They're great for grain and liquid cultures.

Might it be better to remove the aluminum foil for incubation and replace it with a coffee filter rubber banded around the top? Other than that, I really like this lid. I think I'll try it on my next batch of jars. Have you been using this successfully for awhile now?

The aluminum foil can be loosened to provide air exchange, or removed in the case of liquid cultures or overly wet grains. I don't think coffee filters are neccesary.

I'll stick to my poly-fill/tyvek as seen in Doc's WBS Tek, because whenever I use Tyvek with nothing covering it but Aluminum Foil, it ends up getting saturated in my Pressure Cooker.
Good idea though!

that's why you use a still air box and remove the foil and add tyvek at time of inoculation.

Or I could just do it before pressure cooking using Poly-Fill and not have to worry about contamination at all.
