Leek and Potato Soup

Just tried this recipe yesterday:
4 tbsp extra virgin olive oil 2 large leeks, trimmed and roughly chopped 450g potatos, peeled and cubed 1.2L chicken or veggie stock 4 tbsp flat leaf parsley finally chopped 500g live natural yogurt
Heat the oil in a large saucepan, and saute the leeks gently for about 10 minutes. Add the potatoes and continue to cook for about 5 minutes. Pour in the stock and simmer until the potatoes are tender, about 15 minutes. Transfer to a blender or food processor and whizz until smooth. Return to the heat, add the parsley and simmer for 5 minutes. Stir in the yogurt and garnish with extra parsley. I also liberally added garlic to the frying leeks, and cayenne and bay leaves to the finished product.
For a cold version, strain the mixture after it has been whizzed. Mix in the yogurt, but omit the chopped parsley and garnish with chopped leaves.
It said it would be energizing, but after having a bowl last nite, i couldn't sleep! I highly recommend this recipe, maybe double the ingredients if you have freezer space.

Yes, thats true.
Prepare the leeks like this: Preparing leeks.
Regarding the type of potatos, i just used homegrown russets, although the recipe didnt specify.
I think the recipe would taste better without the yogurt, but pack less of a punch.

Sounds good.. only thing I would change is leaving the skin of the potato intact. Almost all the vitamins of the potato are in the skin, and it is alkaline which balances the starch of the inner part. You take away the skin you are pretty much just eating virtually nutritionless starch with nothing to balance it in your digestive tract.

Interesting to know. Peeling homegrown deformed russets is a bitch anyways, will definatley try it with the skin in-tact next time.

While it is damn good for your health and such
for the point of this dish, or whenever you're stewing potatos you probably want to take the skin off.
Leaving skin on stewed potatoes...i dunno, kinda wierds me out.

No, actually that's a myth. Most of the vitamins are inside the potato.

That may or may not be true, but you toss away the skin you are also tossing away 90% of the fiber, which most people don't get nearly enough of. Still, the skins contain a large amount of the potato's nutrients. The skins also contain phytonutrients which are a source of antioxidants including cartenoids, flavonoids, and caffeic acid. As well what I mentioned earlier.. the inner part of the potato is starch. Humans need an alkaline substance to properly digest starch and the skin provides that. Also when you remove the skin, the nutrients are far more likely to leach from the potato while cooking.

Leeks are quite a bit more hefty than a standard green onion, which tends to be hollow throughout most of its length. In this image, I would estimate each cross-sectional cut is about 1" in diameter, though I've used leeks that have been as large as 2" in width. I call them super leeks.


Green onions are pansy compared to these mamas. 
LiquidSmoke mentioned that he doesn't like leaving the skin on the potatos.. but if this soup is going to be blended anyway, you probably won't notice them (unless you have a really crappy blender).

leeks, are absolutely delicious. I love them in soups cause they become all stringy, and besides adding a delicious flavor they add a unique texture too its goodness.

Made it the same, but with half russets, half red potatos - and kept the skins on, and doubled the recipe.
Seems ive mastered the recipe, tastes sooo good.
