too much water?

Well, it's been about 2 1/2 weeks since innoculation. My jars colonized rapidly to about 80% then just stopped. I've heard that not enough water can halt colonization, but my jars have water dropplets condensing where the colonized cake has pulled away from the side of the jar, leading me to believe that's it's not exactly dry in there. Is it possible that there's too much water? If so, is there anything I can do about it? I was thinking of flipping the jars, but was afraid to... will the water seep out of the holes in my jar lid? Any help would be greatly appreciated.
