Probably the honey water it's contaminated....
The problem is this: the solution can hide contams like the molds... you wouldn't notice contams until you inoculate......

rather difficult to know for sure from what little info was provided.
it might have been the honey water jar itself, or got contamed after it left the jar, or it could be your birdseed.
a few more details would help
but one suggestion,
mycellia can withstand peroxide so you might try injecting a little peroxide into the honey water mycellia to kill any competitors that may be present. it will foam up so don't use much.
