I finished pcing my rye jars... i let them cool for about 45 minutes and checked em.. i think they are ruined....does anyone have a pic of the rye grain the way it should look after pcing it? or a picture of rye over pced? mine look like they darken, shrunk, they look sorta like hard red spring wheat berries except bigger...i pced at 15psi for 1.5 hours but i stop about 15 minutes before 1.5 hours...
i still have 4 jars i have not pced yet that i am goingto pc and this time i will only do it for 1 hour that is all.. or do you think 45 minutes should do the trick? i just do not know how to tell if there over pced or not?? i raised the trivet up 1 inch and didnt let the water touch the jars....i watched the weight rock and lowered accordinly too ... before i do the next four jars i thought i would ask

The grains sound fine although next time you should not open your pressure cooker for at least eight hours after it's finished. just turn off the heat and walk away. opening it while it's still hot can introduce contaminates as the pressure rushes to equalize.

Yeah, if you didn't let the PC cool gradually then when you alleviated the pressure all the super-heated water within the grains/jars simultaneously evaporated leaving your grains drier than optimal, and possibly even ruined your filter (if it was Tyvek)

like roachman said, the damage was done as soon as the pressure equalized. That being said, plenty of people who subscribe to the "hot shake" because they're worried about wet grains (non-simmer method) and they have seem to have success with it. Just something to remember for next time.
--- As a side note, as a general helpful tip, I would recommend doing dry runs once or twice before going live. Especially on your inoculation, since there's little margin for error at that point.
Get all the (mock) jars ready, sterilize the room, shower and put on freshly laundered clothes, and go through the whole procedure as if you were really squirting into the jars. Just letting your muscles learn the procedure will be imminently helpful...

well, last night i did my other four jars of rye and this time i only pced for an hour and they look just about the same so i think i am good.. as the the post earlier about me removing jars to fast and not waiting 8 hours before removal... i think they look fine.. i could see some moisture in the jars so should i still be worried that the moisture got out of the rye???? those jars look the same as the jars i finished late last night that i didnt open the pc till this morning and that was about 8 hours
