Help with casing procedure!!!

ok so ive been trying to find out when you add the limestone and oyster shells. is it before you pressure cook? i want to get the casing sterile but i dont know if its ok to pressure cook the stuff. HELP!!

Why do yo want to sterilize the casing layer? That is not recommended. You want to pasteurize it for around 2 hours at 160 degrees F. You do this after you have thoroughly mixed the limestone with the casing material.

there seem to be two different camps on whether to sterilize or pasteurize the casing layer. Personally I always sterilize it, mainly because it's a lot less work. I stick it in the microwave with some saran wrap over the top for 10 mins.
The argument for sterilizing is that the casing layer is supposed to be non-nutritious so killing all the nutrients in it doesn't matter. Also you're not running the risk of some contams surviving the pasteurization. Sterilizing has always worked well for me.
The argument for pasteurization is that with no good bacteria(?) in the casing layer to fight off airborne contams, it's making it too easy for them to get in there. In my (relatively limited) experience I've never had a casing contam until after the 3rd flush, sometimes the 5th and often not at all. So I'd go for 10 mins work over 2 hours.

Why add limestone?
Do these shrooms like an alkali pH? Or do they just not enjoy a very acidic one?

I'm sorry, you have a point there! I made that suggestion based on the idea that he would use sphagnum peat as a base for his casing layer, (very common). Peat is in the 3.5-4.5 pH range. While mycelia tends to like slightly acidic substrates, so do contaminants. Using limestone or calcium carbonate will balance the pH level.
