1 brick will be more than you need they expand quite a bit in water. as far as the coffee goes there is no scale add 1 or 2 pots worth of the coffee grounds.

80/20 is the usual mix of coir to coffee. for the average coir brick, this is roughly 6 cups of coffee grinds total. more or less will work.
and on average, i use 3 quarts (or 6 pints) per brick of coir/coffee. once again, more or less will work.

Math man...math man, lol...I used to remember a cartoon like that when I was a kid, heh.
Anyways... ----------
1 US Gallon = 231 cubic inches. 1 brick of coir = roughly 3-3.5 gallons when hydrated. so that means each brick will hydrate to about 693-808 cubic inches.
12" x 10" x 2" pans = roughly 240 cubic inches each.
Notice I left an inch off the top, that'll be for your casing material.
240 x 3 (trays) = 720 cubic inches. So yea, about one brick should do it.
But I figured doing the math would help.
By the way, google.com will do unit conversions for you if you need help, but it can only convert like types. a lot of people get units of volume and units of weight mixed up for some reason.
