ok i read up on my new pc and it says the nozzles max is 10psi how long should i cook three 1 quart jars full or wbs cuase three is all that fits

word... i use 10 psi for everything right now, i'm going to buy a nicer PC when i have the funds.... I usually just add on a bit of time to what people cook at 12 psi for and I've never had problems..
example: your supposed to cook for 1.5 hours at 15 psi, so you cook for 2 at 10.
if i remember correctly the difference is only 10 degrees F. 15 psi is like 250 F and 10 psi is like 240 F.

ive steralized countless jars with 10 psi no problem, i run the cooker for a hour and 15 and no problems.

Temperature is irrelevant with pressure cooking. The goal is pressure, ignore operating temperature as a comparing factor.

The whole point of the pressure is to allow the water to reach a higher temperature before boiling, thus killing off any kind of bacteria or mold spores that can survive normal boiling temps.
It's simple science; by increasing pressure on a liquid, you effectively raise the boiling point of that liquid because the vapor pressure of the liquid needs to be higher than the ambient pressure to allow the liquid to actually boil. So, what this means is the water can't boil unless it's vapor pressure is increased enough to overcome the pressure created by the steam that causes the initial 15 psi.

IM just about to by a prestive high dome pressure cooker, it comes with 3 wieghts allowing 8 12 and 15 psi, its only 6l but it will be enough for my small scale grow. im of to get it beginning of next week as i just got 3 heavily contaminated jars of nasty green mold

pasturising is a bit different, its not done in a pressure cooker as far as im aware but in a pot, there are a few teks on it.
