He would travel around the world cooking outdoors at some scenic location with a beautiful local backdrop. He would also drink copious amounts of alcohol while cooking. He was kind of a rogueish guy with a british accent. Very cool guy.
My favorite was when he was cooking in Thailand on the deck of a small boat and almost lost his balance and fell overboard. Probably due to alcohol consumption.
Also Justin Wilson was a great Cajun cook and a very funny man. He would also drink wine with the meal he cooked on the show.

Keith Floyd is why I enjoy cooking and don't suck at it. Props to the man!
Also, I think in one country, instead of alcohol (because it was banned) partook in hash.

Yeah Alton Brown for the knowledge.
The "Every Day Italian" chick for the drool factor:
I used to like Rachel Ray but now she annoys the shit out of me.
Also, least favorite is definitely Bobby Flay, ever since he threw that hissy fit on Iron Chef years back, I've never been able to stand him.

For cleavage, Giada.
For entertainment, Emeril (you never really know what the fuck he's cooking, but he has a great time doing it).
But also those dudes from the original Iron Chef (Japan) were all cool.

Is his show off the air now?

John Belushi - Samurai Deli

Seriously, though, the original TV chef was "The Galloping Gourmet" (Graham Kerr).
He rocked! Constantly getting drunk on wine during his tapings.

Alton Brown is awesome, as is Mario Batali...
