Dry cakes
    #7428570 - 09/19/07 02:55 PM (16 years, 4 months ago)

It's been awhile since I've been through this whole process, and I've been doing a lot from memory. My cakes are finishing colonizing, the first two are already done. I went ahead and cased them, but they seemed very dry. It's been about five days now, so I'm not worried about it yet, but should I dunk the other cakes before casing them if they seem dry? Should I be doing anything else differently? Maybe they're always this dry, and I don't remember correctly?

From what i've read and seen on here, I would definitely dunk them if you are doing cakes. I know you said you were casing the first two, but didn't know what you'd do for the rest. If doing cakes, then yes dunk them. And also between flushes. The first dunk after you birth should be for approx 24 hrs. Subsequent dunks could be 12-24. Sometimes you can judge a cake by how heavy/light it is. If it seems light, then dunk longer.

As far as your casing goes, I've read that you don't have to let the cakes sit in the jars for that extra week after full colonization. Your casing material should provide for the moisture you'll need for the crumbled cakes. You can mist the casing layer but don't over saturate it. Some say to spray until it glistens. If haven't done this yet, not sure if I will, but you can also dunk your casing if you want to. I'm not to up on that procedure so you may want to search it and find more. Not sure if you used a bottom layer of moist verm under your crumbled cakes. I use it in my casings. Others say it's not necessary, so it's just a personal thing I guess...Good luck. hope this helped.
