Lets say i left out some coffee and it contamed super quick (for some reason) when left to dehydrate and store.Couldn't i still dehydrate it and still use it since the pasteurization process would kill it?

I'm sure you'd be fine, I've done the same thing before and not had a problem...

Don't use moldy substrates, pasteurized or not. Not only might some of the billions of spores survive, but the mold has already consumed some of the food the mushroom mycelium would otherwise get. Toss them and get some fresh. It's important to spread the coffee grinds out in a tray so they can dry fully for storage. If they're left damp at all, they'll mold within a couple of days. RR

Wow, i did not know you had to dry them out. I had a small zip lock full of spent grounds that i would just dump more in each time i made a pot of coffee. I had that for like a month before using it and it never contaminated and the coir i added it to turned out fine as well. I guess i just go lucky. I suppose ill have to start drying them out.

i always use freshly spent grounds from starbucks nowadays...
i used to keep a container in the freezer that i'd add everyday's grounds to when coffee was done and after a month or so i'd take it out and then use it after it had some time to thaw. i've never dehydrated my grinds.
after rereading your post, i'd suggest you either freeze or dehydrate just letting them sit and pile up in a plastic bag over time is risky.
I'm glad it's worked out so far, but it wont always be so pretty in the end.
