can you start the fruit early

my jars are all colonized on the upper half, but all of the bottom halves are taking forever. Its been over a month since i inoculated. I was wondering if i take off the lids now would that be chill or what...

Also its been real cold the last week.. could that have stopped or paused the colonization or even killed them.

Don't try to fruit them until full colonization.
Cold may be bad, cool isn't necessarily bad. How cold are you talking about?
And what type of jars are you talking about?

listen to dr T, he knows his mushrooms
DONT fruit until they are 100% white, heres a tip.
if they arent growing on the bottom, flip the jars over with a light pat on the bottom

Yep, flipping might help. Might not.

If they really get stalled out, you might be able to cut away the dead spots. Or wash it off under cold running water. But don't try to fruit it.

its about 80 out now, but last week it was like 40-50 degrees. I'll try flipping them over, but what dead spots do u mean and y would I get dead spots anyways...

leave them in the dark. after they turn white, wait at least another week.
