Nice finds! The only agaricus I've been finding are maggot ridden meadow mushies and bitorquis , Lucky bugger lol

A. augustus are extremely flavorful. But the maggots seem to agree with that too! If you are collecting for the table you've got to pick them when they are still buttons, because the mature specimens are certain to be riddled with bugs/maggots.

Also, i have heard of some people having serious allergic reactions when eating A. augustus, so don't eat too much if it is your first time consuming them.

u can grate the caps with a cheese grater, and fry them up like hashbrowns.
they taste kinda nutty, more on the almond side.
very good when left to soak in cut strips in a 1gal bag with teryaki sauce or some sort of marinade, and then made into jerky in a dehydrator :yesnod:

i dont like the fritter idea with augustus. most mushrooms that I know probably have maggots in them, i like to have fairly shredded or thinly sliced as to not notice their little pathways through the flesh and possibly knowing where they might currently be
i dont mind eating them after being cooked, though ive eaten 2 inch long coconut beetle grubs raw
maggots are just a whole different kind of gross, not so much a purifying sacrement

being in the agaricus family, these are excellent fried and then thrown into spaghetti sauces, are excellent in soups - either in cubes, slices, or dried and ground into a powder to add thickening and mild flavor to the soup, are even more excellent on pizzas, and I have even shredded them up and fried them in olive oil to make hash browns like I have already mentioned. all really good stuff
I have considered using the ground dried mushroom mixed with some whole grain flours to make bread. it would probably turn out quite good IMO.

has anyone tried mushroom bread? ive eaten so many candy cap cookies and chant with sauce, but i dont think ive ever had mushroom bread.
hot cream of mushroom soup mixed with (real)milk and a good hearty whole grain bread goes really good together.
