>>The correct amount of air exchanges for most commonly cultivated species is around 2-3 per hour.<<
If that is the case, then how do mushrooms grow in the wild without suffering adverse side-effects? Their natural habitat has unlimited air exchange. How does too much O2 during fruiting cause disproportional fruits? Stamets reccomends "CO2: less than 5000 ppm" (TMC, p.199).
Spawning and postcasing/prepinning stages require 5000-10000 ppm, but that's usually done in a jar or bag with passive gas exchange.
Assuming that the air being pumped actually is clean and humidity-controlled (meaning like clean-room type sterility), I don't see why you couldn't exchange it once per minute. The only danger to the fruitbody might be the wind generated by that rate of exchange.
But in the practical sense you're right - too much air exchange just introduces needless contams and makes the humidity fluctuate too much.

>>You may notice that when the frutibodies appear in nature, they will perform far better in tall grass areas of a field where the humidity and co2 are "trapped" in. <<
I always figured it was the humidity and shade that mushies preferred in tall grasses. I just can't see how CO2 could build up in any appreciable amount outdoors, except in the buried mycelium.
Grasses themselves, in fact, deplete the CO2 in the atmosphere and excrete O2 (and H2O) as a part of the photosynthetic process. One would expect to find less CO2 in most of the places shrooms grow wild (in the shade of trees, mossy areas, tall grass, etc), with a higher concentration of O2.
Have you read or researched this somewhere? I admit, I'm just speculating here based on stamet's call for 'less than 5000 ppm' CO2 concentration. I don't know much about the dynamics of air movement and exchange in natural environments.
What is the everyday average CO2 concentration of a suburban area, anyway?

I agree FanaTEK. It should also be pointed out that many species of mushrooms do not grow in tall grass.
