all the spots that arent' colonized will be open to conatmination when you take them out. this is bad. it's better to leave it in til it's colonized.

Definitely wait for 100% before casing or birthing. If you have a real slow cake that just won't finish, it is alright to remove the cake from the jar and cut out the uncolonized portion of the cake and then birth. The reason you wouldn't want to birth/case uncolonized cakes, is because your leaving the uncolonized substrate open to contaminants to feed on.

As usualy I'm the one with the dissenting opinion :smile:. But when you think about it, the way the question was asked was quite loaded. Give me an excuse to be patient..., well homey don't play that. (BOP!... if you're old enough to know what I mean...)

Okay, I regularly remove substrate at the 90-95% range. I've found that the remaining substrate once inside of a casing will become colonized overnight, usually it's an oxygen problem. I have gone down to pulling cakes out at the 80% level without problems, though I don't really advocate this.

I think it's easier to pull this off in the context of a casing, I would probably not do this if I were fruiting off of cakes.
