How hot is 140-160 F?

I'm pasteurizing some casing I opened a few days ago with the intend to do some patching. I currently have it in a plastic bag inside a sealed zip lock bag in some hot water on the stove on the lowest setting.
Since I don't have a thermometer, how do I tell if the water is in pasteurization range (140-160 deg F)? It's not boiling and I can put my hand in it without getting scalded, but it's definitely quite hot.

Get a thermometer.. they are cheap and easy to find.. don't skimp..
How can we explain how it feels, I believe its nearly impossible, a dollar or less can get a cheap thermo..
However an instant read with a long probe is best, they are 4-10 bux at most stores.

Only way is to get a thermometer. There is no simple distinction between 100 degrees and 200 degrees, unless you like burning yourself.

actually.. you can stick your dick inside the bag and it will tell you how hot it is. Its quite amazing ;] jk.. but yeah just get a thermometer, they cost like a dollar or two at a grocery store, or even at a dollar store. Im suprised you dont have one.. basically everyone has one laying around. can you ask a neighbor?

Fair enough. I'll go out and get one now. Was just wondering if there was an easy folk technique.

Man, the hell. No one sells non-digital thermometers anymore. Went to my local supermarket and a Walgreens.
Ended up picking up a meat thermometer. Says you're not supposed to stick it in water, but seems to work fine for me.

Just don't let the gauge go in water.

140 is very hot- so hot, it would be way to hot for a bath. 160 is hotter than that. Scalding hot. If you put your hand in, and it gets hot and turns red, that's probably getting up to 140. If you put your hand in, and jerk out and yell OUCH and shake it and blow on it and run cold water on it, that's probably 160+.
So you see why you need a thermometer...

I stuck the meat thermo into the casing bag. I let it get a little too hot in there and didn't realize it. I think it was sitting around 180 for a while, but I've since turned off the heat and it's cooling to 170 or so. How bad is that? I've read that over 170 is going into sterilization territory, which is undesired.

It sterilizes, removing not only mold spores but also bacteria that would be beneficial in promoting colonization and discouraging molds from taking hold. Pasteurization is meant only to kill mold spores like trich or cobweb, which die at lower temperatures.
