alright first off, if heat kills spores, than how when you do the oven tek do you not heat up ur jar and kill the spores?

also i only have a 10 psi presure cooker and was wondering if i put the jars in there for 40 mins, they would be alright.

one more thing: how do you people here wash ur jars after u buy em? i used alchohol and then wiped it dry. is this sufficient?

1. You're not actually putting the jars in the oven. You're turning on the oven at the lowest temperature, pulling the rack partially out and working on the rack. It's not like you're climbing in the oven with your jars to innoculate.

2. I'm not exactly sure. This should be suffiecent, because boiling can work too. So even if it's not 15 psi you should still be fine.

3. Yes, that is fine because thats what you pressure cook/boil the jars for anyway, to sterilize them.

Pressure cooking at 10 PSI at sea level; your temp will be 240 dgr. F
15 PSI 250
I boil my jars at an altitude of 4600 feet above sea level(about 203 dgr. F) for 1 hr. 15 min. with good results. You should be OK with 40 min.
