i need help with rye???????and fast

okay so ive worked with rye alot and never had any problems. but now i moved where i moved is half way up a mountain. ever since i relocated i get nothing but contams. so i soak my grain over night and and then i boil them to get the appropate water contant andwhen i pressure cook them they dry up to much. i mean what the fuck. i dont like to add the dry grain and water cause i dont want contaminates. so im stuck........what do i do......my grains dry up and i need to do this all over again tonight...............help

It has got something to do with your altitude. I know there is a nifty graph around of altitude vs. boiling point of water...but I cant find it!

Ya but he said he's using a pressure cooker.. so as long as he's got 15 psi or whatever, the alititude won't matter.
Maybe your kitchen is dirty? More air circulation?

I believe that altitude will affect a PC as well. I'm sure you have to adjust the cooking time to compensate.

It IS an altitude problem... The atmospheric pressure is much lower at higher altitudes causing the pressure cooker to get much higher than normal pressure, so, cut your cooking time in half or reduce the heat under the cooker to compensate.

yea but if i shorten the time i pc wont that effect what im doing. wont that make me more suseptable to contaminates?????????how do i keep them from drying out

Just lower the pressure by lowering the heat. If you don't have a pressure guage on your PC then just make sure the weight wiggles back and forth SLOWLY instead of spinning like a top. Then you can use the normal 45 minutes.

Altitude lowers the temperature of both a boiling pot and a PC. You need to INCREASE the time, not decrease it.
Here's something I found on the web:

When canning, you must know your altitude?even in Ohio. Do not use process times recommended for canning food at sea level if you live at an altitude above 1,000 feet. Water boils at lower temperatures as altitude increases. Lower boiling temperatures are less effective for killing bacteria. You must increase either the process time or canner pressure to make up for lower boiling temperatures. Use publications based on United States Department of Agriculture (USDA) approved guidelines to select the proper processing time and canner pressures for your altitude.
If drying is a problem, add more water.
