Accidental casing sterilize... meant to pasteurize.... SEE PICTURE

I screwed up while I was trying to pasteurize my casing - I left it steaming (live steam) for too long and it shot up to 210 degress by the time I got to it.
Have I created a problem with it now? It likely spent two hours beween 170 and 210. Opinions appreciated. I figure yield is gonna suffer because I killed off the micro-flora in the casing.

sterilizing the casing mix itself is fine, it's not a nutritive layer on its own so it doesn't matter if you kill all the microorganisms in it

Also what are the actual (minimal) temps and times involved in actual sterilizing..... Are there such thing as maximal temps in terms of sterilization.. I would think not??

Which would make sense, except that casing is nutritive plenty....just not to mushrooms. Molds, bacteria, etc will grow just fine. The point of pasteurization is to allow beneficial bacteria to colonize it and keep out molds and contaminant cultures. Bacteria's also a valuable pinning trigger.
That said, I'd guess you're fine. Yes, you probably drastically reduced the contamination-fighting power of your casing. However I frequently use pure vermiculite casings. Not being organic, the verm has no such bacteria. Still stays reasonably sterile over 14 days+ on a casing.
As for cooling...you would like, I'd say, 95 or under. 110 or under is likely fine. I'd go ahead and expose it to air. Getting casing properly hydrated isn't crucial; you can spray it after application. Allowing it to be in open air is absolutely no problem either; that's the state it will enjoy for its entire period of use.

Not as such, no. Molds and their spores tend to die by around 130F. Most harmful bacteria will perish at or around boiling temperature. Some thermally resistant bacillus will take prolonged 230+ exposure.
Keep in mind when we say "sterilize"...it's not really sterilization. There's still bacteria there, it's just not enough to replicate and create serious populations within the window of its use. So there's really no bright line...just guides.

I think we sterilize jars. Sterilize meaning we DO kill all the beninificial bacteria, and anything else. (spores ect.) LIke in our jars if we had any bacteria at all, it would grow inside the nice little inviroment we have made them.
Pasturizing is where we keep the benificial bacterium around, to help keep away contams, and help induce pinning.
Sterilizing is making it 'blank', or free from all life.
Those pics are from amsterdam, they were in high times about 2 or 3 years ago. Its a factory that makes pretty much all shrooms for the smartshops in the 'dam. They grow 5 different kinds I think, and they sell them all fresh. They start with Filter patch bags with h-poo, cow poo, chicken poo, and grains for spawn, then spawn to the average bulk material in those large humid rooms. Their setup is excellent actually. each strain has its own room and everything.

and the picture i was looking for was sadly deleted by the user. I believe it was a picture of a room of subbalteatus being grown for a smart shop in amsterdam. twice the size of that chamber at least
