Mycotek: You said wood ears can go for $20 an ounce? Wish I'd known that! They grow like grass around where I live. Not the tastiest mushies I've ever eaten, but the texture makes it worth while.
I pick morels every year. Have a secret local spot, usually bring back about 15 lbs fresh. A lot of them are gigantic, too. Caps 4-5 inches long, 2-4 inches wide. Taste delicious. Don't know about morel hunting permits in Illinois. Anyone have any information on this? I usually end up giving away a third of them to dear friends and eating the rest myself through the year until next season. My mycophagist friends look at me like I'm a godsend when I offer them sauteed morels in the middle of winter. There's something to leave Santa, eh?
Best of luck with the legal mushie endeavours.

I am wondering how hard it is to get a couple of days at the 'ol farmers market then gradually pimp you wares to the local upity resturants. Figure it's slow at first but nothing worth doing is built in a day.

Anyone know the legalities of selling mushrooms at a market in MI?

Also to a resturant?

Setting up a business on paper takes about 6 hours of writing and filing and phone calls. And about $150

Let's kick some numbers and ideas around

This mag give regional prices but I havent bought it yet

Mushroom newsletter

Oh well I'll see

I'm selling Pearl Oysters for a little over $8 a pound. Easy to grow. I sell my mushrooms a local restuarants. My freshies are head and shoulders above the alternative oyster sourse. I'll try to show pictures on Tuesday. I have about 350 pounds of substrate going in column culture in my woodshop. I made a decent growroom out of visqueen.

What are "Pearl Oysters" ?
Is there a latin name ( would make it easier for me to identify ) ?

kudos to you creekfarmer
please tell us more ... and what part of the country are you competing in?
I have loads of oyster spawn in the making and hope to get a good sized block going soon. Pics of your growroom would be awesome.

I think "pearl oysters" are pleurotus.O  and pleurotus.P is phoenix oyster, though who could tell the difference.

I sold a couple of hen of the wood this year, to a couple of restraunts. These were found. If some one works out how to get chicken of the woods to fruit reliably on sawdust they are going to make a fortune.

Hen of the Woods is grifola frondosa (maitake) & Chicken of the woods is laetiporus sulphureus ... which do you mean?

I found and sold the hen.

If someone works out how to grow the chickens reliably they will make a fortune, if I had found any I could have sold them too. I found very few chickens this year and most were too old for my taste, the ones I found i kept. it was a bit confusing.

Yes I tried plugs a couple years ago on tulip poplar and oak, they didn't fruit. I probably didn't keep them wet enough though.
I've heard people say they have gotten them to fruit. If they were a good way to get them to fruit all the time though I think they would be showing up in stores that carry hen of the woods and other speciallty mushrooms. A lot to people like them it wouldn't be hard to sell them.

falcon, you had me confused between the chicken & hens

This ct company commercially cultivates maitake , they distribute to stop & shop & shop rite chains also.
http://www.franklinfarms.com/varieties/varietyindex.html

Months ago a put a piece of mush in a jar of birdseed to see if it would grow. It looks like it is, but I don't remember if it is this maitake or a pom pom from another farm in pa.

I am growing pluerotus ostreatus. I am selling in the south. Specifically Seneca, Clemson, and Greenville, South Carolina. I'll post pictures of the grow room Tuesday night. I'll probably go to market of Wensday.

Due to the fact that I live in BFE, posting photos is not an option. The up side is that I made $150 dollars today selling part of my first flush. If you are truly interested in photos of my grow room and crop, pm me and I will send you a cd rom with pictures and details.
