what's your favorite vegetable-based main-dish?

i'm lookin to get more vegetables into my diet.

so help me out guys, what do you like to eat??

(edit: to clarify, i have a vege cookbook but most dishes have like 10 different herbs etc and take like an hour to prepare. im lookin for simple things)

Stir fries are great.

I'm making Quinoa right now. Its a nut like think with tons of protein. I'm making it cold and throwing in corn, tomatoes and cucumbers.

Spinach is really healthy. You can sautee it in butter/coconut oil.

Yuck! Spinach is best by itself! It gets all slimey when you sautee it; personally I wouldn't want slimey green spinach amidst anything else.

ok - get some fresh asparagus
cut off bottom third with knife
smear,pour olive oil over it
sprinkle garlic powder over it
put under broiler for 3 - 5 minutes

oh man
so nutty good.

I don't really have a favorite dish.. just whatever is on hand I like to make stuff out of it

A few favorites though;

Insalata Caprece Salad

- several red ripes tomatoes.. sliced
- a few chunks of fresh mozzarella, sliced
- fresh basil
- salt, pepper
- extra virgin olive oil

Take slices of tomato, put chunks of fresh mozzarella on top. Chop fresh basil and put on top, salt and pepper to taste. You can add capers as well. Drizzle with olive oil last, and eat with bread.
Simple, and absolutely delicious. Can't go wrong with this stuff.. unless you use shitty ingredients.


Fried Squash

Slice up some squash, heat up a pan with some olive oil or butter.. toss in squash. Add salt, pepper, parsley, and cayenne pepper to taste. Cook for about a minute on each side. Enjoy.


Salad:

Take any combination of leafy greens, and vegetables. Cut them up and mix them together. Eat.

I've always been a big fan of steamed broccoli with a little butter and salt. Homegrown broc, even better.

Oh, just noticed you wanted a main dish. Stuffed bell peppers then... YUM!

broccoli and cheese is badass..

i also like making terayki noodles with various veggies thrown in, i mainly like peppers and carrots and shit.. but i doubt they are even real vegetables, i never eat fresh food, i live out of boxes and cans :sad:

Gotta be Eggplant Parmesan! I love that stuff, it's so filling and tasty. You can use a meat and tomato sauce with it, so you get a little bit of meat in there but a lot of vegetable, if you want meat. :o

Eggplant Parmesan is great. If you have never cooked eggplant before, you might want to peel the eggplant before you cook it, and brush it with some olive oil and Italian herbs or something. It is kind of bland to begin with, so if you flavor it well, your experience will be much better. I also recommend fresh mozzarella and Parmesan, but truly fresh mozzarella can be hard to find at times.

I like leaving the peel on it. :O The way I do it you fry the eggplant, layer it with the sauce and cheese, then bake it for a couple hours. You have to properly season each slice of eggplant and fry them correctly too.
