Casing yields more & bigger fruits The con side is a risk of contamination(or so i here) But if you practice a sterile tek. it's not an issue. Keeping humidity optimal may also be a little tricky. Better to have a RH guage with casings ( although i don't use one) You'll develope a feel for what's right at least i did

I havent done casings on a large scale yet (just single cake casings), but, IMHO, Id learn to do both. Cakes are faster, and with the new dunk teks can produce nearly as much as casings under the right conditions (or so Ive heard). Ive had some HUGE shrooms come off cakes too (so big it tipped the cake over!).
Do cakes first, and every time you start a new batch of substrate, devote a couple jars to exploring casing tecniques.
