What are you doing with your terarium (ie darkness, heat etc)? You normally induce your colonized cakes to pin by reducing temperature (74-78F) and 12-16 hours of light. If you keep it dark and keep the temp. up your cakes will just continue to colonize.

My understanding is that if the cakes just keep growing mycel fuzz on them the humidity may be too high. That can happen pretty easily if you are using perlite.

Leave the top open a little bit, or do more air exchanges.

Definitely try reducing the humidity- fluffy mycelum growth indicates good growth- probably from too much humidity.
