Annother thing...

what will be the diffrence between using a vermiculite, peat and oyster shell mix and just use vermiculite?

Well lets see, time wise, could be as little as 10 days, as much as 20.

If you are going away you should case them. It will take the mycelium a while to grow through so as long as you incubate them and make sure the casing is nice and moist you'll be fine.

As for spraying, buy a humidity gauge and keep the humidity at 90% or higher.

As for casing, use all of the proper ingredients. The peat is for water retension and the oyster shell is a PH buffer to ensure the casing isn't too acidic. If you just use vermiculite the colonizarion may be slow and the end result (your mushrooms) will not be as large or as good.

Check your local hardware store for a hygrometer(humidity gauge). You can get a cheap combo thermometer/hygrometer for a few bucks. More accurate, adjustable ones sell for quite a bit more.
