Hows this sounds? I'm trying to finalize my materrials list so I can start buying everything this weekend.
Substrate:
60% Coir 15% Worm Castings 15% Cofee Grounds 10% Garden Gypsum 2 Table Spoons of Kelp Meal (per 5 pounds) Hydrated Garden Lime as needed
Casing: 60 Cups Dry Peat Moss 60 Cups Vermiculite 3.75 Cups Gypsum 1.25 Cups Hydrated Garden Lime

I don't bother adding Lime or any PH buffer to the sub, only the casing - from what I have read that is where things can turn south if it gets too acidic. Although I don't see it being problematic if you do take that extra step.
You've got a lot of variety in there which is excellent! I've never used Kelp Meal, but I don't see where it could hurt - although it has some ingredients that are derivative considering you are already adding Gypsum, it shouldn't hurt anything.
I also don't see any Vermiculite listed in your sub mix, I like to add a decent amount of that to fluff things up a bit. I usually spawn 2 Coir Bricks (8-10 qt each depending on compaction/size) and to that I add a mix of 4 Qts Verm, 2 Qts Gypsum and all my other additives. So about %20 Verm addition could be beneficial as well.
Since you are adding Coffee grounds I'd consider that your nitrogen supplement, but you can also use Blood Meal and other options which run more "hot" but are a little less of a hassle to deal depending on your situation. Sounds like you have a good game plan!
Also that is a hell of a lot of casing! I usually only use a very thin casing layer over my 12.5 Gal (50QT) monotubs, usually ends up being about a single quart of casing mix for a one tub. So depending on your surface area you may need to scale it up or down, I have found casing depth to be an easy area to trip up on when you first get started... it's easy to over do it!

I would inquire a little further as far as your substrate is concerned. I noticed that you include gypsum and lime in your substrate mix. I recently asked a similar question and RR told me that Mycelium likes an acidic substrate, so there would be no need for gypsum and lime to buffer the substrate. I kind of felt dumb and am currently looking for a PH meter so that I may re-formulate my substrate.

I just got my ceiling ripped out cuz my neighbors toilet overflowed for 5 hours. All the drywall is just laying around my house. gypsum anyone?

Take out the worm castings or cut it back some more and add more coir. The worm castings can get contaminated by Trich fairly easy if you aren't careful with your moisture. I would leave it out until you get better at eying out your moisture levels.

I've always heard RR say to use that at 10% of your substrate. With the exception of straw I think. Don't quote me on the straw thing.
Anyways, leave that gypsum in there!

Gypsum is a dual purpose additive!
Helps increase yield as it boosts calcium. Helps stabilize PH.

I'll just cut out the worm castings becuase they were going to be a pain to find anyways. Other than that everyone seems to think it looks okay. Looks like I'll e going shopping this week.
