Tweek My Substrate Recipe

Heres my substrate recipe…
5 pounds of dry hpoo
1 shot glass full of vegetable oil
1/2 cup food grade diatomaceous earth
1/3 cup gypsum
1 teaspoon of algit kelp meal (if using just coir, use 3)
1 teaspoon of hydrated garden lime (if using just coir, use 2)
1 teaspoon of stevia leaf
Anyone have suggestions to substitute the hpoo? Would straight coco coir be as effective or can some one give me a mix of things to substitute hpoo. I think coffee grounds, and worm castings have been mentioned. Please tweak my recipe for me because I don’t think I'm going to find hpoo and I don’t really wanna deal with it either considering I’m gunna need 50 pounds of this stuff.

If this is your first time growing, I would leave out the Veg oil and the stevia leaf. Also you are going to need more Gypsum. You should add it at 10% of your total substrate. The diatomaceous earth really isn't necessary either. If you have it, its cool to use, but I wouldn't go out and buy it. All it is going to do is hold water, and add calcium.
The reason I say leave out the veg oil and stevia leaf is, if you don't get your substrate just right in its moisture levels, then that veggie oil can sour and ruin everything. Also the stevia leaf should be composted in to your substrate. The sugars have been known to ferment on people that didn't compost it in. These things are more advanced and shouldn't be used your first go round. Trust me your mushies will be plenty potent with out all that.
Now for alternatives to Hpoo. Coir, Black Kow cow manure, are the two most common. I recommend Coir if this is your first time. Add about 15% coffee grounds to it. You can get them free at star bucks.

Alright so how does this sound
5 Pounds of Substrate:
75% Coir 10% Garden Gypsum 15% Cofee Grounds
Question is how much hydrated lime and algit kelp meal should be added 5 pounds of substrate following this recipe?
What about worm castings? I think I read somewere that cofee grounds are an alternative to worm castings? Or does it provide a whole different nutrient to the subtrate?
Last ... thanks for the advice on the veggie oil. This is my first grow and I do not want to risk ruining it but I do plan on buying a moisture meter becuase I dont trust myself to eyeball the moisture. If I had a moisture meter to make sure the level was right do you think it would be a good idea to add the oil or is a moisture meter not reliable enough?
