yet another casing question

Ok, y'all, I have read and read and read some more.
The first jars of wbs are almost fully colonized and I have been reading alot about pasteurizing. The method that will be used hasn't been decided upon yet. I know if the oven is used to add the water first. But have read negatives about using the oven. What I don't understand is if the method of a pillowcase and 160 to 170 degree water is used how do you maintain correct moisture? I understand that you let it dry afterwards, oh I am just confused! There is waytoo much info on here about casing. 
I appreciate your patience and advice. Have done alright with cakes, just wanting to try something new.

If you have a pc it is simple to pasteurize in heat resistant bags or jars.

I've never tried the pillowcase method, but it sounds like a huge PITA.

Thank you Simplemachine. Unfortunately I borrowed a pc for the WBS and it's an older aunt that asks why I need her pc. But it's a nice big Presto! So I try to just borrow it only when absolutely necessary.

i haven't done it but i believe that you let the water drain from it as you let it cool and that leaves you with the correct amount of water. maybe shake it around every few hours and leave it on a strainer for a day.

I just read that link and it looks like it's possible to do without a pc, I have a big pot so maybe I'll try it. Thanks.

i used a pillow case and it worked fine when it was done the texture of it was like wet instant coffee

Thanks kurtis, I am kind of leaning towards this method. I know it's highly recommended. Did you do as LayYouln said and leave it to dry out for a long time? How long?
